Clara Claus loves Christmas, it’s in her nature after all. However, both Clara and her brother Nick love cookies. Clara says her mum’s Christmas cookies are like a warm, comforting, hug — especially on a cold day!

Ingredients
- 120g butter, softened
- 75g light brown sugar
- 75g caster sugar
- 1egg
- 1 tsp vanilla extract
- 180g plain flour
- 1⁄2 tsp bicarbonate of soda
- 1⁄4 tsp salt
- 165g chocolate chunks (Clara likes to use chunks which she breaks up from a bar of chocolate)
Recipe
1. Pre-heat the oven to 180c/160c fan oven/gas mark 4. Get a grown-up to help you with this and remember ovens are hot!
2. Line two baking trays with greaseproof paper or parchment paper.
3. Cream the butter, the caster sugar and the light brown sugar together in a bowl until the mixture is fluffy and pale.
4. Beat in the egg and the vanilla extract and mix well.
5. Stir in the flour, bicarbonate of soda, the salt and the chocolate.
6. Scoop large tablespoons of the mixture onto the lined baking trays. Remember to leave enough space for the cookies to spread!
7. Bake for 10-12 minutes or until the cookies are firm at the edges and soft in the middle (they will harden as they cool). Make sure a grown up helps you remove the cookies from the oven!
8. Leave to cool for a few moments before carefully transferring to a cooling tray.
9. Enjoy delicious chocolate chip cookie yumminess!
